Remember to wash your hands under warm soapy water for 30 seconds or more before and after you handle raw eggs! Add oats, flour, baking powder, baking soda, and salt and beat until well blended, about 1 minute. Worth the effort especially if you live in a city without Milk Bar. After reading the other reviews, here are the changes I made: intentionally undercooked the oat cookie in phase 1 so that it would have a better chance of not burning in phase 2, amped up the salt in the crust for a heightened salty-sweet reaction, threw in some mini chocolate chips for an extra flavor kick, watched the oven like a hawk for the first signs of burning.
The oat cookie crust is the star of the show. When the oven reaches 325° F, close the door and bake the pies for 5 minutes longer. Whisk both sugars, milk powder, and salt in medium bowl to blend. If the filling is still too jiggly, leave the pies in the oven for an additional 5 minutes or so. I keep wanting to make it at home but I never get around to it. I am so glad that this recipe makes 2 or else I never could have left the first with them! It was a big hit and was requested to be made again by several people. Place pie dish with crust on rimmed baking sheet. One of our favorite characteristic in this cookbook is that you can read it well cover to cover. Bake the pies, one at a time, for 15 minutes, then reduce the heat to 325 degrees and bake until the filling is slightly jiggly and golden brown, about 10 minutes. Lots of gooey marshmallow and the cornflake provides a great crunch to complement the richness of the chocolate chips. Bake until golden brown at the edges and set in the middle, about 15 minutes. They make awesome pie crust.

But others are over the top, as if conceived in a fit of the munchies. I made two 5 inch tarts rather than a pie pan couldn't find my pie pan , and that may have helped. Not as goopy as pecan pie. Also cool they let you have complimentary water and coffee off to the side. This pie is delicious, and if it's cooked long enough, it gels beautifully and is actually quite lovely with some powdered sugar dusted on top. There is a recipe at epicurious. However once I started reading the cookbook I was sucked in and by the time I finished the book there were many recipes that I knew I had to try! Other than that-- it was amazing!! This is a sugar custard pie, a descendant of the old Southern category of chess pies. In a large bowl, break up the oat cookie into small crumbs resembling wet sand. Everybody loves a chocolate chip cookie, and the nostalgia factor is appealing. Seriously, this pie is insanely addictive. Divide the filling evenly between the 2 prepared pie shells. The dough will be a slightly fluffy, fatty mixture in comparison to your average cookie dough. If you have time to spend making this from scratch, I recommend doing so.
After having it fail runny and under-cooked three times when following the recipe religiously, I adjusted the cooking times and temperatures. It definitely added a great complementary flavor to the filling. The results were great; no burned crust and I was able to skip the step of baking the cookie and crumbling it. Anyways, I should stopping mumbling and spoiling every detail. As for the pie itself, I think the best way that I could describe it is a pecan pie without the pecans… or the corn syrup. If not using immediately, the filling can be stored in an airtight container and refrigerated for up to 1 week. I love how it has all the classic American flavor in the most unusual way — its own quirky way.
